Every good start gives way to a great story, Tequila Leyenda de México ® is producced in a 7 phases process, each one includes a specific and crucial step to obtain premium quality tequila. Our first stage begins in the land where Tequilana Weber blue agave is grown.

CULTIVATING A STORY

1. Agave selection

We select the best agaves to be planted only in the lands of Los Altos from Jalisco, about 9 years are expected so they reach the maturity necessary, after this time the agave give us its best taste.

2. Agave pineapple

When the agave has a giant pineapple in the center, the JIMA begins with the JIMA which consists of cutting the leaves flush with the heart of the agave.

3. Baking

When the agave arrives at the factory, the process of this elixir of the Gods begins. The pineapple is cut into 4 parts to be accommodated in masonry ovens, where it is allowed to cook slowly, for an approximate time of 24 hours. After a rest day it will be ready for grinding.

4. Grinding

The cooked agave is taken to the mills to be squeezed to obtain a delicious and aromatic juice called must which is balanced in sugars and temperature to give way to its first transformation.

5-6. Fermentation & Distillation

Once the must has been placed in the fermentation vats, patiently will wait for nature to do its own thing by transforming aromatic sugars into delicious alcohols in this process, continuing with the last step of their transformation.

In stainless steel stills with copper coils and by steam, we make a double distillation process, in cuts of elements leaving only the heart of the product, resulting in an excellent Tequila.

TIME TO CREATE

7. Aging & bottling

When you get tequila, it goes to the areas of corresponding oxygenation and then take it to packing. If your destination is to take it to the barrels, the decision is made to the tequila it will become, which can be from a young tequila, until you let it sleep for 3 to 9 years to create an attached Extra Tequila
